I love including a combination of sweet potatoes with gold potatoes because of the touch of sweetness the sweet potatoes bring to the dish, then combined with the creamy cheesy sauce for the perfect side dish. You can choose your favorite kind of cheese for the sauce, as long as its a good melting cheese, just like you can pick the proportion of sweet potatoes to gold potatoes according to your taste. 4 1/2 lbs. potatoes (combination sweet potatoes and gold potatoes)
1 C. Freshly grated Sharp white cheddar cheese
1 C. Freshly grated Gruyère cheese plus extra for topping (your choice of cheese)
1/3 C. Finely chopped onions
2 medium garlic cloves (finely minced)
5 Tbsp Butter
4 Tbsp All purpose flour
1/8 tsp ground nutmeg
