Creamy homemade baba ganoush, my new obsession 🤤 it’s SO easy to make, anyone can do it!

2 big aubergines (eggplants) 🍆
1/4 cup smooth tahini (or tahina)
2 tbsp lemon juice
1 minced garlic clove
1/2 tsp salt

Slice the aubergines in half and roast with the cut-side down for 40 minutes (or until collapsing) on 240C/460F.
Scoop out the flesh and add to a mesh strainer. Let drain for 10 minutes, stir it once in a while to remove moisture.
Then add the aubergine to a bowl, mash or shop the aubergine even more, add rest of the ingredients and combine. Serve in a bowl or have as a dip 🤌🏽
