Congee is very versatile! You can mix in chicken and chicken stock to make chicken congee. You can do a vegetarian congee by adding corn and chopped spinach with veggie stock and a stalk of crushed lemongrass (optional). In Indonesia, we love congee so much that every island would have their own variations 😊

Hey man, I've seen you like saving here's some tips from my french friend:
1. Blend veggie scraps and freeze paste into cubes to make stock
2. Onion and garlic peels baked till dry then ground will make a great seasoning
3. potato and carrot peels make an amazing chip bowl
4. Pumpkin seeds are a great nut alternative
5. Date seeds can be turned into a pot of coffee
6. Expiring milk can be heated with lemon juice to make cheeses or made into yoghurt.

If using uncooked rice, wash first, add some oil, and freeze. Frozen washed rice are easier to cook and saves time.

In Nicaragua 🇳🇮 there’s a similar dish called “ Arroz aguado” ( watery rice) my very favorite comfort dish of all time ☺️

Just try not to make another dish or reheat a dish that you made with leftovers. One exception may be risotto. You can make a risotto-ish dish with leftover rice and then the next day warm in balls with cheese in the middle and fry them to make risotto balls. But like for instance, this congee, if you don’t eat it by the day after you make it, I would throw it away.
