St John of Damascus was also the first to deal with the problem of Islam. He wrote a fantastic refutation that’s worth reading.

Note: Damascus was no longer part of the Eastern Roman (aka Byzantine, a term coined long after its fall), when St. John of Damascus wrote his works. That meant he could write his defence of the icons, etc. relatively unimpeded. He pointed out that Islam is a heresy (actually a heresy of a heresy, namely of Arianism, to which it adds the false prophet and false scriptures and teachings, etc) of Mohammad. At that point it was a second degree heresy. There have been further splits, between Sunni and Shia, and then, for example, within Shiism. Later still spinning off additional false prophets, such as the founder of the Bahai's, a syncretist religion which preaches many (mutually contradictory) paths to God.

While I find Saint John and Saint Maximus to be great theologians

I have a great respect and admiration for Saint Gregory Palamas.

If you were to look at the period up to the Great Schism, in my opinion the greatest Fathers of the Church are:
St. Ephrem the Syrian, St. John Chrysostom and St. Basil the Great
