When Master spoke about the "8 Mortals", he meant "Immortals".

It is very difficult and literally impossible to directly translate "八仙過海，各顯神通" as the line is mythical and metaphorical, and written in ancient Chinese as supposed to modern Chinese。Even "eight immortals 八仙" translation does not capture the literal meanings of "仙”. Based on my understanding, it denotes someone who is above the human existence, the human realm, whom lives a life outside of the mundane and somewhere between heaven and earth, detached from earthly greed and desires. Please correct me if you have a different understanding.

Back to the original saying, it can loosely be translated as eight immortals crossing the ocean, and each of them displays their unique powers and abilities that they could float across the water with their special skills and mythical abilities.

Coming back to the earthly realm, in China if you hear people say this line, it refers to us as individuals with special and unique talents and we all play our special part in the society, elevating us at times above mundane existence, and no one should look down and judge people based on superficiality, since each of us has our unique talents and abilities within us, ready to demonstrate to the world.

Master GU is awesome, however I think the videos would maybe benefit from subtitles, just a thought (for the record Master Gu's English is very good, much better than my Mandarin, I've tried)
