Make this SUPER FRESH watermelon salad for Easter! #shorts

This Watermelon Feta Salad is a MUST for your Easter table!

Here's how it's done:

2 tablespoons orange juice
1 lemon, juiced
1 small shallot, minced
2 teaspoons honey
½ teaspoon kosher salt
¼ cup extra virgin olive oil
6 cups cubed seedless watermelon
4 ounces feta cheese, crumbled
½ cup chopped fresh mint leaves

Inside the large bowl, whisk together the orange juice, lemon juice, shallots, honey, and salt. Slowly pour in the olive oil, whisking constantly, to form an emulsion. If you’re going to eat the salad later, make it in a lidded jar and refrigerate until ready to serve.
Place the watermelon, feta, and mint in a large bowl.
Drizzle with enough vinaigrette to coat the salad lightly and toss it well.
