I didn’t like mid rare steak until I realized it was because this one’s I ate were by people who couldn’t cook them with proper seasoning etc, making well done seem “tastier “ by comparison due to the char.

I used to serve tables at a certain popular steakhouse chain. One day, our manager was giving a presentation to staff in the kitchen about the quality of the meat we use - said they could even be eaten raw. I happened to be walking by at the moment to get something for one of my tables and he offered me $20 to eat a raw steak to show everybody how safe it was. Easiest $20 I ever made and I got a free meal out of it. I like my steak rare, so it wasn't too bad. Only downside was that it was cold and unseasoned. It was like chewing on meat-flavored gum. Still, it saved me from having to pay for my own dinner after my shift and I made some extra money to offset the slow night we were having.
