today we're talking Buddha bowls! a super healthy, filling, easy, and creative way to get some of your most important nutrients with lots of leftovers for future meals & snacks. GET CREATIVE there is no wrong way to make these grain bowls so use whatever you have on hand, or try new things!

what I use in this video:

v e g g i e s : broccoli, zucchini, onion, carrot, kale, asparagus
t o p p i n g s : lots of dried herbs, ground flax seeds, sesame seeds
d r e s s i n g s : trader joe's jalapeno sauce, avacado ranch (not actually vegan!)

this version I make is actually a pretty good source of protein (would be even better with beans) so if you're vegan or vegetarian, Buddha bowls are great for protein as well!

This is such a good perspective: thinking about adding healthy ingredients into your diet instead of taking stuff off.
One of the biggest diet changes that made my health better was adding more fermented foods. I don't eat dairy so no yogurts and kefirs but sauerkraut, miso, kimchi... That made such a difference and it's so delicious!

I love Buddha bowls. I like to do themed ones like Greek bowls. I’ll do the big pearl couscous with tabbouleh and cucumbers, tomato, chickpeas, red onion, a little feta, and a drizzle of tzatziki sauce. So good!

Love the honesty about disordered eating. Love love the Lizzie McGuire reference. You're my fave :)

I’m usually a silent viewer but I loved hearing you rant about your love for nutrition because I’m exactly the same way. Growing up I always loved cooking and learning about health and nutrition. Now I recently graduated with a BS in nutrition science and I’m currently working at an eating disorder clinic for adult women, cooking and teaching them to be comfortable with food and it’s been such an incredible eye opening experience. And hearing about your outlook on life and health is inspiring to me and I just wanted to share that with you!

In Germany we only have the kind of veggie broth that you have to dissolve in water and you can't even get the broth in cartons. I remember being soo confused when I first saw someone use it in a cooking video 😅
Also a pro tip is making your own broth! It's super easy and delicious! You basically just take a handful of veggies and cook them in water. It's great for using leftover veggies and things you would otherwise throw away, for example the stem of the kale that you had in the video or even onion skin! Also veggies that begin to be a little flabby or the ends of carrots...Just whatever you have on hand.
I don't do that always either but it's always yummy and I always feel like I'm so healthy totally have my life together when I manage to make some. 😂 You can make a load and store the rest in the fridge and also adding herbs tastes good

I’m not trying to be *that person* I swear, just offering a tip. I think (I’m no expert lol) that ground flax seeds can oxidize if you don’t refrigerate them. Stick em in the fridge to keep them fresh and keep all the nutritional benefits :)

Love these videos, and this lunch/dinner idea!

Thank you for this so much. Please share more recipes and healthy eating insights. I’m on a weight loss journey and (more importantly) a health journey and this was great for me to watch.

Regarding the sharing your findings part - you could do that along with the source you found it in. This way every one can make up their own mind whether the tip is good or not. This could also open up a good discussion which you could benefit from too.

small note on "I think this kale is going bad so I hope it's okay to eat" - usually veggies are more visually unappealing before they're actually not safe to eat (like people see wilted leafy greens or slightly slimy asparagus and they toss it our vs cutting out the bad parts or cooking it anyways)

Fun fact since you mentioned not being afraid of oil: for the American diet, canola oil is healthiest because it has the greatest amount of omega three since the ratio of omega three to six should be 1:1 and it is not. Oil is a very easy way to incorporate a good amount of omega three in so don't shy away especially on healthy things like veggies! :)

I’m so happy that you are making this type of videos cause’ I love everything that has to be with cooking but unfortunately I can’t do I lot of stuff where I’m living right now and also love gardening and I’m trying to make my own garden I already have chili and mint but I’m going to try with some lettuce and tomato so I hope I can make my on fruits and vegetables one day!

Honestly you could make a video about almost anything and I’d still be interested in watching because I really enjoy your personality & watching you talk is very calming. I never was interested in watching someone review/discuss horror movies, yet I really like watching your horror channel! So, I’d totally be open to watching your health vids
