Prime Rib with Garlic Herb Butter

Here is what you'll need!

PRIME RIB WITH GARLIC HERB BUTTER
Servings: 7-9

INGREDIENTS
1 cup butter, softened
7 cloves garlic, minced
2 tablespoons fresh rosemary, finely chopped
2 tablespoons fresh thyme, finely chopped
2 tablespoons salt
1 tablespoon pepper
5-7 pound boneless ribeye roast, trimmed
2 tablespoons flour
2 cups beef stock
Mashed potatoes, to serve
Green beans, to serve

PREPARATION
Preheat oven to 500°F/260°C.
Mix together the butter, garlic, herbs, salt, and pepper in a bowl until evenly combined.
Rub the herb butter all over the rib roast, then place on a roasting tray with a rack.
Bake for 5 minutes per pound of meat, so a 5-pound roast would bake for 25 minutes, and a 7-pound roast would bake for 35 minutes.
Turn off the heat and let the rib roast sit in the oven for 2 hours, making sure you do not open the oven door or else the residual heat will escape.
Once the 2 hours are up, remove the roast from the pan and pour the pan drippings into a saucepan over medium heat.
Add the flour, whisking until there are no lumps, then add the beef stock, stirring and bringing the sauce to a boil.
Remove from heat and strain the sauce into a gravy dish.
Carve the prime rib into ¾-inch slices, then serve with the mashed potatoes, green beans, and sauce!

I've made this recipe every Christmas for 4 years. I'm always a little sad when I'm pregnant and can't eat it rare, but it's my absolute favorite dish! It's so so easy to make too! Just gotta find white butter and let it sit at room temp for a day.

Tried this for Christmas dinner. Flavor is WONDERFUL! One suggestion: After the two hour rest, turn oven back on to 300 degrees for 10-20 minutes. Otherwise, the roast is cold in the center. I don't believe this short time will make it any more well done, just hot to serve.

I've cooked your recipe twice now, both times they've turned out a pure winner. It's one of the family favorites now and I use a rib eye roast. For a more medium-rare to medium, I cook mine at about 7 minutes per pound. Also fresh asparagus works really nicely too. cook the asparagus about 12-15 minutes total at 400 degrees. I like to sprinkle mine with EVOO, Himalayan pink salt, coarse black pepper and lemon zest. One extra note, if you can time everything else to be done cooking at the moment you pull out your steak at the end of 2 hours, then everything tastes perfect, temp perfect, texture perfect. I made it for Christmas Eve and it turned out fantastic.  At first I thought putting it into the oven at that heat would immediately melt off the butter mixture, but it immediately baked it right onto the meat.  My roast was 5.25 lbs. and I cooked it at 500 for 25 minutes and then 2 hours in the hot/off oven (never once opened the door to sneak a peek). I let it rest for 15-20 minutes after taking it out of the oven and VOILA...PRIME RIB PERFECTION!  I will make it this way from now on.  P.S. I have an electric cooktop/oven....worked great!

I made this for Christmas dinner tonight and it was FABULOUS !!! So easy. I have a history of overcooking beautiful cuts of mean and this is the first year I didn't. I'm sold .... and we have a new favorite. The gravy was the best part !!

Following this recipe was perfect. I made a few adjustments as in adding more garlic and an extra herb or 2. But this is pretty spot on!
