Stefanie, I made this with gluten free flour, half white and half brown sugar, and I used a mix of coconut cream and 'tofutti' cream cheese substitute for the filling. It was not as thick as yours but the end result was still wonderful! It was a huge hit at my dinner party! Thanks again for such successful recipes :)
