Well, like many choices in life, your resistance selection will involve trade-offs. Let's say you choose a higher strain gage resistance. It will provide lower current for equal bridge voltage, which results in less grid self-heating and potentially better resistance stability over time. In addition, there will be higher bridge output when bridge excitation is increased and the lead-wire resistance will have less influence.

You need to be careful with strain gage resistance and a balancing circuit. If the balancing circuit is digital, then no issues, if the balancing circuit is analog, you will introduce non-linearity the severity of which gets worse as resistance of the gage gets closer to the resistance of balance resistor via which balance DAC is connected.
