Since they stick to the metal table edges, I'd say have a couple of squared metal bars over the table they work on to hang the wraps to dry. Not so many that they'd get in the way of the workspace/workers' heads. Bonus, if they fall off for any reason, they don't hit the floor.

I work in a kitchen, and we have these metal racks on wheels, called speed racks. They have about 20 slots to place sheet trays in and we’ll typically use them to hold trays of salads or proteins, but I feel like they could actually be a good solution for drying space. It wouldn’t be all that hard to either just place some trays or rods on the racks to provide hanging space as needed. The wheels would provide flexibility on where this drying rack is, and the ability to move where your mounting apparatus is on the rack would mean you could adjust the space between layers for different sized wraps.

Like the other comments said, you can either use overhead hanging space by installing collapsible bar hangers or use the space as you are now by installing ladder-type structures that can attach/detach from the work station you can also install a bar and buy some of those hangers with wide bodies to paste the sheets to and hang :)

There are wooden dowel style laundry racks that might for drying if they will stick to them without having to have them folded over the dowels. If not that, then a rod or metal bar(s) that hangs above the work stations but not in the way of the workers view.

okay i dont know if you have network to a welder but Uhm, something like a triangular rack on 4 wheels.
Triangular from the side and square right on multiple bars across to hang the wrappers.

As a side and front view, it's really hard to communicate through text with no picture LMAO, ideally it would also slope way less so it would be maybe 40cm deep and two-three big wreppers wide.
Oh and welder because I just assumed you needed it to be a metal surface for easy cleaning and I guessed plastic would be too porous, if not u could just make it out of some pvc tubing

Just hang ropes? Idk the roof is pretty high you could get some storage out of that. Idk how you would get the wraps to stick tho
