For those that don't have a vacuum chamber:
-Grab a 2L bottle of soda(or whichever size you have laying around)
-Put a few pieces of kelp inside and a piece of ginger (DON'T skip the ginger, and DON'T peel it)
-Put some amount of sugar inside (the real amount is not really important... Anything above half a cup is good enough... It will be used to fuel the fermentation and will disappear) and fill the rest of the bottle with water
-close the bottle and leave it under a bed or other dark place for 1-2 months

After a while it will be fizzy, but completely sugar free, you can then put any amount of sugar you want(or sweetener) and enjoy

This works with basically any fruit/vegetable you want too
