If it's not falling off the bone it hasn't been cooked long enough. Low heat and slow cooking. That's how we do it in Texas. :)

Ribs needed more time in the smoker, they'd be fall off the bone soft.

As a Texan I can tell you how to cook ribs - make a dry rub, then rub it in all over the meat on both sides, cook on the grill for half an hour then turn it over and cook the other side for half an hour. Then wrap the ribs in foil and put in a 300 degree oven for 3 hours and the meat falls off the bone!

Rub recipe:
5 tablespoons paprika (If you can find it use Smoked Hungarian)
2 1⁄2 tablespoons salt
2 tablespoons granulated garlic (Garlic Powder)
2 tablespoons onion powder
4 teaspoons fresh ground black pepper
2 teaspoons dried chipotle powder (Chipotle chili powder)
2 teaspoons ground cumin
1 teaspoon ground coriander
1 teaspoon dried oregano
1 teaspoon cayenne pepper (or to taste)

Mix in a bowl and rub it on both sides of the ribs or brisket!!!

I don't know why, but I love seeing people from different cultures enjoying the foods we cook here in Alberta (the Texas of Canada). We are immensely proud of our beef industry here, and when I find some extra money burning a hole in my pocket, as happens from time-to-time, I shall see if I can get you some proper grass-fed ribeyes from the farmer down the road from me. I'm sure they'd love those.

We bought a smoker while living in Austin. Smoked the best turkeys I've ever eaten for Thanksgivings (and other food). When we moved to the west coast, we upgraded our smoker and smoked even more than we did in TX. It might be in the water there... and might stay with you (and maybe you eat the best stuff out there and figure out how to cook it at home; Austin area has some incredible BBQ).

You needed some BBQ sauce for that brisket! (...or to have it properly prepared & smoked.)

You guys do a great job at getting close to the real thing on all these videos, im sure like how us americans wish the ribs would be fall off the bone tender (literally pick th bone up and the rib meat slips out) that there are nuances i havent noticed of other cultures food that only a pro or native would get right

Beef ribs just need to be cooked at low heat and a longer cook time.
You will know they are perfect when the meat slips off the bone and are tender and juicy.
