Hi Dear.2 days I was searching bread recipes and and up with yours. I love German bread. I couldn't find Rye flowers, so I put 2 cups of all purpose flour. I had all ingredients and I made bread seasoning by your recipe. My bred raised very good, believe or not, we couldn't wait to eat in the morning, so we tried almost midnight 👍🏻😘. Fantastic recipe. Amazed taste, I had only cashews to add but the bread is so delicious.
Even though i bread was thin after baking . How should I do to make the bread having more inside air purples and higher? Please advice me.

I have a banneton from Germany, my question is that it's 8" across on top. Is this large enough to use for this recipe? If I need to use a bowl should it be lined with a towel with flour so it does not stick to the bowl. I would love to use the banneton just not sure of the size and if I use it should I bake the bread longer until what temperature 190-200 degrees to ensure it's baked properly. Sorry for the long question. I excited to finally make this bread. Thank you for your help and for sharing the recipe.
