After trawling through the many offensively inauthentic bubble and squeak videos on Youtube (where bubble and squeak is baked or includes egg or is formed into patties), I KNEW I'd found the genuine article when I started this video and saw this very English-looking, English-sounding gentleman in his very English kitchen. I've been having trouble keeping my bubble and squeak in one contiguous chunk through the turn (a challenge, as I've been using a large, heavy pan), so I appreciate the direction when it comes turning the thing over. It's great to see someone doing this properly! Thank you!

I'm N.Irish and my Dad's version of this was left over peas (garden or marrow fat), he cooked them in patties with a poached egg on top, DELICIOUS.

I like the cabbage one as well.

I'm English and we had roast pork dinner last night and I'm doing Bubbble and Squeak tonight. I guess we must all have our own take on doing this delicious dish. I just chop all the leftovers up, tonight that will be Mash (left from from night before last) and all the leftovers from our roast dinner. Roast potatoes, cabbage, carrots broad beans and chopped up pork. I will mix everything together chuck in a hot pan and fry till golden and crispy (keep turning and adding back to mix) on the outside and soft and fluffy on the inside. Job done.

This needed a LOT of help with seasoning. Quite bland.

While cooking the vegetables throw in some Old Bay, Lawry's (seasoned salt), minced onion, and minced garlic (or garlic powder). I also added chives into the mix before putting in the pan to fry.
