Homemade Dumplings 3 Ways

Here is what you'll need!

HOMEMADE DUMPLINGS
Servings: makes 24-32 dumplings

INGREDIENTS
4 cups flour
1 teaspoon salt
1¼ cups warm water
2 cups red cabbage
2 cups green onions, sliced
6 cloves garlic, minced
4 tablespoons ginger, minced
2 tablespoons sesame oil
2 tablespoons soy sauce
½ pound ground pork
½ teaspoon pepper
1 teaspoon salt
¾ cup mushrooms, diced
¾ cup carrots, diced
½ pound shrimp, peeled and deveined

Sauce
¼ cup soy sauce
¼ cup rice wine vinegar
1 teaspoon sesame oil
1 teaspoon crushed red pepper flakes

PREPARATION
1. Combine the flour, salt, and warm water and mix until well combined.
2. Roll out dough on a floured surface and knead until smooth.
3. Separate the dough into 4 equal parts.
4. Roll out the piece into a thin log and divide into 6 or 8 pieces depend on the size of dumplings you want.
5. Lightly flour the divided piece of dough and roll out piece to a thin circle roughly 4-inches in diameter.
6. Keep the dumpling wrappers separated with parchment paper, and repeat with remaining dough.
7. Combine cabbage, green onions, garlic, ginger, soy sauce, and sesame oil and mix until well incorporated.
8. For the pork filling, combine the ground pork with salt, pepper and 1 cup of the cabbage mixture and stir until well incorporated.
9. For the veggie filling combine mushrooms and carrot and microwave for 3 minutes, until soft. Add 1 cup of the cabbage mixture and stir until well incorporated.
10. For the shrimp filling, combine shrimp with 1 cup of the cabbage mixture and stir until well incorporated.
11. To assembly dumplings, add roughly 1 heaping tablespoon of filling into the center of a dumpling wrapper.
12. With your finger lightly coat 1 half of the outside of the wrapper with water.
13. Seal the dumplings using your prefered method.
14. With pleating, start from one side and pleat the half of the dumpling closest to you, keeping the other half still.
15. Heat oil on medium high in a pan and add a few dumplings, cooking them in batches.
16. Once the bottom of the dumplings start to brown, add in a splash of water and cover witg a lid.
17. Steam for roughly 5 minutes, or until dumplings are cooked and water has evaporated.
18. Enjoy!

I mean you're pretty much free to put whatever in a dumpling but just a few things that I thought might've been not "authentic" (I mean heck, cuisines evolve and change and what I point out is just how my family does it. Please feel free to correct)
-Garlic is usually not found in Chinese dumplings (But I've heard that they're common in Japanese Gyozas)
- I have never eaten or seen red cabbage or even just cabbages in dumplings (though Chinese cabbages are common place in dumplings (yes there is a difference between cabbage and Chinese cabbage))
- You don't need water since you made the dough yourself and it should stick together fine, but, if you used store bought ones definitely use water
- The skin should be rolled out in a different way, you take the skin by one side and you spin it while rolling out the sides. This makes the dumpling skin thin on the outside and thick on the inside because the inside has to carry the meat so it should be thick and the skin out side has no flavour so it should be rolled out really thin. The best dumplings should be plump from all the meat inside with thin skin.

I really really love to eat dumplings so I hope that people can understand more about it and because I'm Chinese, I'm just sharing the common Chinese way of making dumplings. This is not gyozas or Koran dumplings (Sorry don't know what those are called) so if you are Japanese or Korean the things above only applies to Chinese dumplings.

A quick tip for first time makers: Be sure to squeeze out any air pockets between the filling and the inside of the wrapper or it won't cook properly and probably fill up with water inside.

If you're going to make this, it's essential that you close the lid on the pan immediantly after you add the water.

when you roll your own dumpling wrappers, make the center a little thicker :) it helps prevent the dumpling from breaking and leaking all the juices out!

Dumplings are very popular in Nepal (we call it momo) and for a moment, I forgot other cultures also eat dumplings so when they put in the mushrooms I nearly threw my phone away 😂

Guys, just put whatever you want in your dumplings! I personally don't put red cabbage in mine but I add century eggs in mine. Just make whatever that makes you happy! Food is love yo!

Dumplings hack! I found out recently that to get the best thin dumpling dough, just run it through a pasta machine! It makes the same thin sheets that you can cut circles out of for delicious dumplings!
