I love making creme brulee. I like to torch the bubbles too before baking. Recently I've been making mine in a small mason jar, and cooking sous vide. Works amazingly well.

For those who dont know the tricks of making creme brulee...
Dont overbeat your eggs,
Too much air means too many bubble and well, trust me when i say you dont want bubbles.

Next trick, the blowtorch. He did the blowtorch to destroy the last amount of bubbles left. You dont want any visible bubbles on the surface of your creme brulee.
