You could also thicken that liquid with tapioca starch, and add it to the pie, or even make caramel and add the liquid to it and add that to the apples.

theres actually an even simpler way. tarte tartin.
rub an oven safe pan down with butter, sprinkle with sugar, lay out with apples and cover with pie or puff pastry. put on the stove on low heat until you can smell the apples caramelize. then chuck that sucker in the oven until the dough on the top is golden. flip onto a plate for cutting and serve.
