I just made your recipe last night for the first time...TRULY the BEST apple pie I have ever made!!! partially cooking the apples first before adding them to the crust was game changing!!! question...what is the purpose of placing the pie in the freezer fro 20 minutes prior tp baking?

How sweet, Marie starts off with a statement about how this pie is "...not perfect", that that's not what she's going for and then, bless her heart, proceeds to make the most beautiful, perfect apple pie I've ever seen—and, at 74 y.o., I've been making pies for a lot of years. Made the double crusted apple pie today. Thank you, thank you, thank you. Prior bad experience with homemade pie crust. Followed your steps and, fantastic. Once you said perfect is not the objective. I also like the make ahead tips. I am a good cook but hesitant about pie crust, no more. I am 71 years old and really enjoyed learning from you.

As a 55=year long chef, I can say that I really like your down-to-earth realistic approach to cheffing. Nothing is ever perfect, and neither is anyone for that matter. Wow!! I decided yesterday that my latest hobby is pie baking. I made an apple pie and it definitely tasted good but the crust was greatly overcooked. I just came upon your video on pie crust which then brought me here. I am so impressed with everything I just watched and heard. I love your voice, your great explanations, and how much you enjoy what you’re doing. I’m a 72 year old grandmother who has always been an avid baker but was never able to have much success with pie baking. Your videos have given me hope.😀 Thank you so much for sharing your expertise.

I once made an apple pie with only three good size apples. The first time my father came to see me in my apartment in another city I served him a slice of apple pie. He said it was the best pie he’s ever had and not to change a thing. Start with Macintosh apples they are always soft and a beautiful flavor. 1/2 cup sugar
1/4 cup honey
Dots of butter
Cinnamon
Tapioca

Hi Marie, this is embarrassing, but I’m going to write it anyway. In November of 2023 I contacted you looking for guidance with a pie crust recipe (not yours) that I was struggling with. I love pie and used to make it occasionally and to be honest it wasn’t bad, but it was always a struggle and I felt less and less confident. (I also didn’t make pie often as I wasn’t blessed with good metabolism, so I’m usually dieting.)

Anyway, you were very kind and reassuring, but I didn’t muster up the courage to actually try your pie crust recipe until now…late September 2024!

OMG, this is a game changer!! I have made two apple galettes on two different days and the crust was SO easy to work with. Thank you, thank you, thank you for sharing the recipe and providing the clear instruction and the science behind it. I am now able to make your delicious pie crust with confidence and success.
