Also keeping air flow off the helmet is ideal as they're not aerodynamic efficient.

This is completely wrong. Evident by the fact that some teams don't have this "windshield".

The driver's hands don't get chilly because of their gloves.

The driver's helmet does not lift because of the winglet on their helmet. However this has been reduced dramatically because of the halo and as a result some drivers don't have a winglet on their helmet.

It's actually more accurate to say that it helps with aero, especially drag reduction

Pretty sure the one thing no f1 driver is concerned about would be some cold wind hitting his hands given its like a million degrees in this cockpit

Not realy. Aero is a sitenote for that.
The Hand of the drivers must not leave the cockpit. So Mercedes designed that "shield" wich is classified as part of the cockpit to comply with this rule.
Of course it's part of the hole Aerodynamics....

It’s not for helmet. It’s only for their hands and the steering wheel. They change airflow so drivers hands doesn’t get affected by the wind cause if it does then they will barely be able to move their hands. The wind hitting their helmet does nothing because their helmet is already designed to withstand it. The windshield is only for stopping wind hitting drivers hands and steering wheel
