I'm not certain you don't have an error with the dry yeast percentage. The 0.05% seems unattainably low. Your figure lists the yeast out to be 0.15 grams; a teaspoon of dry yeast weighs around 3 grams so to measure out your amount one would need roughly 1/10th of 1/3rd of a teaspoon of dry yeast. Yikes! I think your calculations are likely meant to be 0.5% yeast based on bakers percentage, standard for long ferments, which would be a more reasonable 1.5 grams in your calculations.
