I use salt that's been blitzed in a spice grinder until it's powdered, and stir it into the oil before the unpopped corn. Provides more even results than trying to add it once the corn's already popped.

Ashley, a pro-tip from an ancient popcorn popper...
Leave the lid ON the saucepan and LISTEN for the 3 pops for the test kernels. It stops hot oil splatter and... jumping out of your skin!

One of my favorite toppings is some sugar mixed with smoked chipotle. It tastes just like fresh kettle corn. It has the sweetness from the sugar and the smoke flavor like it was popped in one of the huge kettles over a fire. Plus it has a little kick.

I’d recommend using clarified butter - otherwise it makes the popcorn soggy. I sometimes add a little butter to the oil just before the popcorn, which gives the water in the butter time to evaporate.

I usually add a mixture of garlic salt, black pepper, and sometimes a dash of cayenne to the popcorn ... and then I shake, rattle, and roll the whole kit and kaboodle until it's stopped popping. Shaking is especially important with electric stoves, to avoid burns from hot spots, and popping the corn with spices increases its flavor immensely.
