Learn how to make the perfect royal icing recipe for making decorations that last! Royal icing is a smooth, hard-drying icing is perfect for making flowers, rosettes, and other decorations in advance. You can even use royal icing, sometimes called cookie icing, to cover and decorate cookies!

Note: This recipe is for a stiff consistency icing. Depending on your decoration, you may need to adjust this recipe to medium or thin consistency.

INGREDIENTS:
4 cups (about 1 lb.) confectioners’ sugar
5 tablespoons warm water

TOOLS:
Electric mixer with paddle attachment (or hand mixer with beaters)
Large bowl

thank you so much for this recipe and thanks to the person that said to sift the sugar. I actually cut this recipe in thirds and it made a little less then half a cup. I only needed a super small amount :) thank you

This is a great video. I've used royal icing in the past but I definitely learned some helpful hints. I ruined my hand mixer with royal icing! I hadn't even mixed it very long. Now I have a kitchenaid mixer so I hope to have better luck

I tried this last year for Christmas cookie decorating. The icing came out like in the video. I added a bit more water to get a thinner icing for flooding the cookies. The meringue powder works wonderfully. The taste is a bit different with meringue powder than with a regular buttercream frosting, but as a cookie decorating it worked perfectly. I would not recommend frosting a cake with it, though. Buttercream works better for that.

Two questions:
At what point in the process can I add coloring?
If I make flowers with the icing, do I store them at room temp or should they be refrigerated?
