INGREDIENTS FOR THE PAVLOVA SHELL:
4 egg whites
1/4 tsp cream of tartar
pinch of salt
1 tsp vanilla extract
1 cup (200 gr) sugar
1 1/2 tsp cornstarch

A pavlova is a large baked meringue shell that is topped with soft whipped cream and a sauce- typically a fresh berry sauce or chocolate ganache.

The shell is baked at a low temperature so that the outside of the shell sets and gets crisp, while the center stays soft and marshmallowy.

Why no white vinegar? Most other recipes say that this is needed to create the soft middle.

Why did you decide to use the French meringue instead of the Italian, which is the most stable? Also does it matter which of the three different meringue one uses for Pavlova?
