This pattern suggest it's a mix between honey and sugar syrup. A purer type of honey will show more even pattern with each cell's shape closer to a hexagon :)

A "beehive structure" has cells with 6 sides. This test gives cells with 5, 6, and 7.

If you try this test with molasses and corn syrup you get the same beehive like structure..
