If a dump can get a star it means the food is that good it can overcome the detracting points of being a cheap diner.  It is a shock at first but many places in South East Asia are like this. They specialize in one or a few dishes and may have done so for up to 100 years.

People always judge a restaurant by how great the food is and not what title the restaurant got. In some situation, a street food is even better than the pricey one in a restaurant.

I don't understand. Michelin is one of the best companies in making tires. How can they be the leading expert in picking the top chefs?
