Potato Dishes Episode 3: Persian Salad Olivieh

Persian Olivieh(Olivier) salad is the smaller cousin of the famous Russian Olivier salad. It's an incredibly easy and straight forward potato dish to make any time of the week, and especially useful over the holidays when you need to feed lots of hungry mouths. It's fantastic as a salad for barbecue, side dish for roasted chicken or simply as a delicious simple lunch dish. Not only that, but it will keep well in the fridge for three days, which means it is a great make ahead potato dish, saving you time and effort when cooking roasts.
