Recipe: Easy Black Bean Soup (Vegan, Oil-Free, Plant-Based)

Before we switched to a whole food, plant-based diet, we spent years trying to lose weight with things like portion control, calorie counting, etc. One of our favorite recipes to make while counting calories was a delicious black bean soup from one of Rocco DiSpirito’s cookbooks. It was a simple recipe and became a staple in our kitchen for several years.

When we made the switch to plant-based, I knew this recipe was one that we could pretty easily "convert." Recently, we have started digging out some of our old cookbooks for inspiration, and we decided to try out our own version of the black bean soup. The original recipe was super simple because you used things like ketchup and salsa in it. We tested it out a few times and finally landed on our very own whole food, plant-based version!

Easiest way to get all of the ketchup or salsa out of the jars is to pour in that warm veggie stock, cover, shake. It will all pour out easily.

I had a big ol' bag of dried black beans in my pantry and when I saw your video yesterday - YES! I'm making that tomorrow. Put my beans in water to soak, went to bed and first thing morning started slow cookin' my beans. All morning they simmered away with no salt. Removed most of the almost cooked beans into a bowl, picked up your recipe where you dumped the canned beans in the pot. I have to confess that adding that unsweetened cocoa powder was a bit heart wrenching as I've already invested hours into my beans, but I trusted you. Shut the fridge! What a fantastic soup. I love it and has to be the best soup I've ever made. Can't wait to serve it tonight with some biscuits (for the hubby, oh hell I might have one :-). I added about 5 drops of Colgin Pecan Liquid Smoke and it was absolutely perfect. Have fun in England/Paris. We had such a blast many, many years ago. Be proud of what you've done because I certainly am. Thanks for the inspiration.

I love using the scale in grams to save on messy measuring, works with peanut butter or any sticky ingredient. Good tip Jessica and about time. I just made this soup it only took a couple minutes and is really good. Thank you.

Thanks so much for the recipe! Just tried it and I love the depth of flavor! I made the spice mixture and split it into portions that I can add for just 1 can and voila! Instant black bean soup!
