Today's video is inspired by Mina Rome because I love her videos and she recently made a "Everything I eat in a week realistic and easy" video, which was a great insight into easy vegan options. I eat a lot of food that I have meal prepped, along with foods I can throw together, and more luxurious and time consuming plant based meals on the weekend!

» BBQ sauce:
• 1 cup yellow mustard
• 1/2 cup light brown sugar
• 3/4 cup apple cider vinegar
• 2 tbsp of hot sauce (I used homemade)
• 1 tsp black pepper
• 1 tsp white pepper
• 1 tbsp smoked paprika
• 1 tsp soy sauce
Mix the sauce together and save 3/4 of it. Score the tofu and add to an oven proof dish. Bake at 180c for 20-30 mins (you want the sauce to thicken up nicely).
