Beef and Rice Taco Bowls 🥩🍚🌮
Showing you all that it is possible to throw together a few delicious meals in a short amount of time! These taco bowls require no prep and come together in less than 15 minutes. While this is not my usual meal prep, my goal here is to show that food can be made despite a busy schedule. As much as I’d love to make every meal fresh and from scratch, meal prepping has helped me get through these busy times in life while eating relatively clean, delicious, and affordable meals.
Servings: 4
Serving Size: ~300g beef mixture, 125g rice
Macros: 650 cal, 56g P, 22g F, 64g C
Estimated Time: 15 minutes
Ingredients:
-2 lbs 90% lean ground beef
-500g (two pouches) cooked white rice
-10 oz. fresh salsa
-8 oz. diced bell peppers
-8 oz. diced red onion
-two packets of taco seasoning
-corn or tortilla chips for topping
-one lime
Instructions:
-heat rice in microwave and add into meal containers
-brown ground beef in a pan and add peppers and onions; mix well until softened
-add taco seasoning and 1/4 cup water; mix well
-add beef mix into meal containers
-store and reheat according to instructions below
-after reheating, top with lime juice, salsa, and chips
*How I Store and Reheat Meals*
1.) meals that will be eaten with 4 days go into the fridge; the rest go into the freezer
2.) pick a meal from the fridge and microwave for 2-3 minutes, mixing halfway to ensure even heating; I keep the lid on and slightly off-center to allow the meal to steam and to prevent splatter
3.) transfer a meal from the freezer to the fridge and place it in the back of the line; this gives it 1-2 days to defrost before reheating
