Dinner is easy and delicious with this taco rice bowl. This recipe makes taco rice in the slow cooker that is flavorful and easy. Serve with your favorite toppings for all the flavors of tacos - with less work and less mess!

Ingredients in Taco Rice Bowls

1 cup canned salsa (Pace or similar)
1-2 pounds ground beef
1/4 cup taco seasoning mix (or 1 packet)
1 onion, diced (optional)
1 bell pepper, diced (optional)
4 cups chicken stock (can be made from bouillon)
2 cups uncooked jasmine rice

How to make Taco Rice Bowls

In a large slow cooker, add salsa, ground beef and optional vegetables.
Slow cook on high for 3 hours or low for 6 hours.
Add chicken stock and rice and mix around.
Cook on low heat simmer or rice setting, until rice is fully cooked and liquid is absorbed.
Can be served in a tortilla, burrito, or in a bowl with favorite taco toppings: cheese, salsa, taco sauce, fresh pico de gallo, guacamole, refried beans, cilantro, lettuce - this is easy to customize.
