🍕here is the recipe:
-150ml. water
-200gr. poolish
-10gr. honey
-20gr. salt
🍅recipe sauce:
-butter, -1/2 onion white, -pepper, oregano, 1/2 teaspoon sugar, garlic.
Cooking 425f. for 35 minutes.

You brings back memories Chef. I lived for years in Chicago, and this is more properly called a "Stuffed" pizza, as opposed to the traditional "Deep Dish" pizza. The style was originally invented in 1974 by Nancy's, whereas deep dish was invented decades earlier, probably around WWII. My fav version is from Giordano's. Another Chicago-style pizza variant is the rarer "Double Decker", which is basically 2 pizzas on top of each other (a heart attack waiting to happen!). But surprisingly, the most popular pizza in Chicago is actually a crispy thin crust cut into small squares that they call "Tavern Style". Chicago is the true Pizza Town USA.

I just found your channel. Thank you for the wonderful recipes!!! Your engery & passion with food is great! I love your story's & pictures of your family. My dad was Italian & loved to cook as well. Luckily I was blessed enough to get to know some of his family's recipes before he passed away. I was young when we lost him but I did get his love of cooking. Hearing your stories about your family & the love you feel for them went straight to my heart! In the crazy, cold world we live in today so many people don't seem to care about family, loyalty or even care enough to find out about their families.
