Healthy Chickpea Salad Recipe:
Chickpeas - 1 Cup
Small Cucumber (diced) - 2 nos
Tomato (seedless dice) - 2 nos
Onion (diced) - 1 no
Iceberg Lettuce (optional) - 1 Cup
Dressing:
Olive Oil - 3 tbsp
Honey - ¼ Cup
Black Pepper Powder - ½ tsp
Other Ingredients:
Oil - 1 tsp
Kashmiri Chilli Powder - 1 tsp
Cumin Powder - 2 tsp
Salt - ½ tsp + ½ tsp
Cooking Instructions:
1. Wash and soak the chickpeas for 6 hours and strain it.
2. Transfer the chickpeas to a cooker, add enough water till the chickpeas are submerged. Add ½ tsp of salt and pressure cook it for 5 whistles. Let the steam reduce gradually and strain the chickpeas.
3. Heat a pan, add very little oil and add the chickpeas.
4. Add kashmiri chilli and cumin powder. Mix well on a medium flame for 2 minutes
5. To prepare the dressing, mix olive oil, honey and black pepper powder together.
6. To a mixing bowl, add lettuce, onion, tomato, cucumber, chickpeas and the dressing. Mix well till all of it combines evenly.
7. Season the salad with salt. Mix well and serve.
Cooking Tips:
1. Squeeze half a lime to the salad for a little zing.
