Salt Potatoes

If you’ve never heard of Salt Potatoes, you’re in for a treat. I grew up not too far from Syracuse, NY where this recipe originated. Small or new potatoes are cooked in really salty water, which helps the water boil faster and cook the potatoes through quickly. This means that they don’t lose their shape, are extra creamy on the outside and the salty water gives the potatoes their signature look of an ashy white coating.
You might expect the potatoes to be really salty, but they actually aren't. The potatoes have a pleasantly salty exterior, but as you bite into the potatoes, they're not salty in the least.
Served with melted butter, a sprinkling of fresh herbs and freshly cracked black pepper, you won't be disappointed in the delicious favorite of Central New Yorkers.
