Should you salt your 🍝 "like the sea"?

The phrase "like the sea" may just have started as hyperbole to encourage cooks to season their water more, because the tendency is definitely to underseason. Or it's just the beautiful poetry of Italian cuisine to imagine pasta flavored by the sea. Whatever it is... don't take it literally.

Just like salting your food, proper saltiness really comes down to personal preference. Adding SOME salt to your pasta water before cooking the pasta is extremely important though because it's the only time you can infuse the pasta with seasoning to enhance the dish.

Salt levels should be as high as possible without tasting outright salty, which for me was about 1 TBSP per Liter/Quart of water. But you'll have to experiment and see what works for you.

So basically “as salty as the sea” just means “salty enough so the water tastes mildly salty.” 😂

One thing I only recently realized is that fresh/dry pasta makes a huge difference with this... fresh pasta needs a LOT more salt because its in the water for only a couple of minutes, compared to like 10 minutes with dry pasta... so it doesn't have nearly as much time to absorb the salt

Firstly, to echo what everyone else is saying: your transitions are outstanding. Someone has some serious editing talent; that is AWESOME.

And secondly, I want a retest! I'd bet money that that saying came about when old Italian grannies were cooking fresh, home-made pasta that only needed a couple of minutes in the water, not the 8-12 the dry stuff needs. This was a valuable test regardless, because there's a probably thousand people eating dehydrated, boxed pasta to every one with fresh stuff, but I request a repeat experiment with fresh pasta to see if there's any credence to the saying.

I'm Italian, my family taught me that you should put "un pugnetto di sale", literally a small punch (hand closed like a punch with the salt inside). the size of the punch however changes of course based on preferences, amount of Pasta and the size of your hand!

Totally agree. I see these chefs saying add a ton of salt to boil the pasta then use the same water to thin down/ make your sauce. First time I tried that when I was a kid was the last time. Salty as eff indeed.
Now I barely salt my water and it turns out fine. I finish cooking my pasta in the sauce anyway where it absorbs the flavour.

I to wanted to comment on thatbfinal transition. Like so simple yet hit so hard. Truly breathtaking. A master class in video editing. It brought a tear to my eye. I am transformed and will never be the same after this. Nor will my pasta water.

Finally someone talks about this. The way I do is to add salt to the cold water and dissolve it, tasting it until it tastes like a nice, salty, soup. If it burns or is not something you'd want to drink, it's too salty. If it's not salty at all, add more salt. Perfectly seasoned pasta every time, it just takes some time to work out the ratio at first.
