Some notes from someone born and raised in Hawaii, and worked at asian-style restaurants:

First, everything looks amazing Josh! Great job of really doing your homework on a lot of these elements.

For the Teriyaki, you don't need the corn starch step. If your teriyaki sauce is made correctly, there should be enough sugar in it to thicken the sauce just by bringing it to a light boil for about 5 minutes.

For the Katsu, I would add some grated ginger/garlic to any part of your flour/egg/panko process. The hint of flavor that adds to the "crust" of your Katsu is what makes it pop if you ask me.

And the green onions never go on the Mac Salad, even as a garnish. Put it on the Teri Chicken next time 🤙

One thing I was shown by a local was a small adjustment to the mac salad actually gives it that authentic texture you find in many versions on the islands. Slightly overcook your noodles, not al dente. And shave in some washed white onion! Changes things to a whole new level. Try it out sometime!

Love this! Maybe you could do another round of Hawaiian food at a later date and show us how to perfect the garlic shrimp and spicy garlic shrimp plate lunch like they make in Kahuku on the North Shore! I miss it so much! 🌺

A long time ago, I got a recipe for Hawaiian barbecue chicken from a local that was better than any of the side of the road places we tried in Hawaii. Great recipes should be shared. Here it is...

Hawaiian Barbecue Chicken

Chicken Thighs
1 C. packed light brown sugar
1 C. soy sauce
4-5 cloves of garlic chopped
1 1/2 T. fresh ginger root chopped
1/4-1/2 large onion sliced
1 stick of salted butter after grilling
4-5 green onions, sliced small

In a bowl, mix the brown sugar and soy sauce together. Keep mixing until almost all the sugar is dissolved in the soy sauce.
Add in the garlic, ginger and onion and mix.
Let the mixture sit for a few minutes.
Put meat into a zip lock bag and pour mixture over it. Depending on how much meat you have you may need to make more marinade and split this into 2 different bags. Let this marinade for at least 4 hours.

When ready to grill, put melted butter in 13x9 Pyrex dish. When the meat is grilled, put them in the Pyrex dish to bath in butter. When all the meat is done, add the green onions.

As a person who not only grew up in Hawaii, but is also part-Native Hawaiian, I really appreciated this video. The only criticisms I have is with the mac salad. I personally have always overcooked the noodles for my homemade mac. Also adding some finely diced white onion and MSG will take it to a whole new level.

While I love a quick plate lunch, I've gotta say. Nothing beats a good loco moco. Fantastic in every single way imaginable. The soft rice, a savory beef patty, a rich gooey egg, and the gravy bow to tie it all together. My go to every day when I don't know what to eat. I like to caramelize some onions to put in between my beef patty and rice for a little extra OOMPH, and add mushrooms to my beef gravy

I grew up in Hawaii. This is one of the best treatments of Hawaiian style cuisine I've seen from a non-Hawaiian.

The Katsu is more commonly chicken, by far, but nothing wrong with a good pork cutlet katsu at all, and it's 100% authentic.

It would nearly always be served with a side of katsu sauce, and on a bed of shredded cabbage. If you make it with chicken breasts, cut the breast in half so that it's only half as thick. That way it will cook through much quicker and you are less likely to have to 'rescue' it because of a raw spot in the middle. The pork should be cut so it's not too thin (and you can also pound it out flatter, but I haven't done that personally.)

Another commenter is correct... No garnish on the Mac salad normally. Garnish on the chicken teriyaki. Green onions and/or sesame seeds are authentic on the Teri chicken.  

The very saucy Teri presentation would be unusual in a Hawaiian plate lunch place. Usually just a marinated thigh, which may or may not be chopped up. No need to add an extra round of sauce. I'd finish the teri chicken under the broiler to give it a nice char, then garnish with sesame seeds and maybe green onion. Serve with POG juice. ONO!

As a Hawaii Resident, you did a great job making what we call a plate lunch. The Mac salad is a staple with all of our local style plate lunches here and the Teri chicken/Pork Katsu combo is a winner. As we would say here, looks “Ono” which means delicious. Thanks for recreating this and featuring it on your channel.

YES, THANK YOU JOSH! I moved from Las Vegas to Charleston, SC a year ago and while I miss a lot of food that I can't get here, I think I miss the Hawaiian plate lunch most of all. This is one I will almost certainly try my hand at making.

I ate the mixed plate at a place called Aloha Mixed Plate on Maui. It was amazing, we went back several times!
One note, the mixed plate also can be made with Kalua pork (a type of pulled pork that is perfect without BBQ sauce).
10/10. Would recommend!

The best mayonnaise for Hawaiian style mac salad is to get "Extra Heavy Mayonnaise", usually from a restaurant food supplier, it does make a difference.
