A Caramelized Onion Galette You'll NEVER Forget

This savory galette is inspired by a pastry that I had at a small cafe in upstate New York. The smell of coffee, fresh crisp air and taste of cheese and caramelized onion is something I'll be thinking about long into the coming winter months. Seriously - do yourself a favor and try baking one of these! Even if you use store-bought crust, I guarantee it will be amazing.

Exact Ingredient Amounts:

For the dough:
1-1/4 C AP flour (plus more for dusting)
1/4 tsp kosher salt
1/2 tsp granulated sugar
1 stick (1/2 C) cold unsalted butter
3-5 tbsp ice cold water (approx.)

For the filling
2 lbs white or yellow onions
1 tsp salt
2 oz goat cheese
2 oz mascarpone cheese
4 oz cubed pancetta
1-2 oz Gruyere, cubed

Assembly:
1 egg mixed with 2 tsp water (eggwash)
Finishing salt
2-3 sprigs fresh thyme

1-2 hours?! Never have I ever wanted to make pie crust from scratch, but this might inspire me to try it.
