French Onion Galette
Great as an appetizer, light lunch, snack, dinner side.....
Recipe
4 Vidalia Onions sliced thinly
4 Tbs Butter
4-6 Sprigs fresh Thyme
Salt
Pepper
1/4 cup dry Sherry
1 cup beef broth
Gruyere cheese or Swiss
Puff pastry sheet
Prepare onions in a large skillet with 4 sprigs of thyme, butter, salt, and pepper. Cook 20 - 25 minutes. Some onion edges should be lightly browned/golden.
Turn down the heat and add Sherry and beef broth. Cook until onions are browned and liquid is mostly evaporated. Remove from heat and let cool completely.
Turn on oven 375⁰F
Prepare puff pastry.
Roll out into the desired shape. Brush edge with water and fold pastry making a crust. Brush with cream if you have it for a prettier crust. Poke holes in the bottom of the pastry, not the crust edges. Sprinkle with Gruyere. Layer on onions. Spread out evenly. Top with a little Gruyere and fresh Thyme.
Bake 40 minutes. Rotate halfway. Finish by topping with Gruyere and put it under broiler for 1 minute.
