Learn how to make Sheet Pan Pancakes that are keto + paleo-friendly. These easy baked pancakes are made with a mix of almond flour, coconut flour, eggs, almond milk, cinnamon, and vanilla extract. Keto sheet pan pancakes are perfect for meal prep or feeding a crowd because they are super easy to make, without the hassle of standing at the stove flipping pancakes.

This breakfast takes five minutes to throw together before it bakes in the oven. And you can build off of this to create different variations based on whatever you have on hand, or whatever you’re craving. I kept half of the pancake bake simple and just added sliced strawberries. I let my daughter add her favorite toppings to the other side - raspberries, blueberries and chocolate chips. Yum!

INGREDIENTS & PRODUCTS USED + MENTIONED:

SHEET PAN PANCAKES RECIPE
1.5 cups superfine almond flour
3/4 cup coconut flour
2 teaspoons baking powder
2 teaspoons cinnamon
1/4 cup monk fruit
1/2 teaspoon salt
6 eggs
1.25-1.5 cups unsweetened almond milk
1 tablespoon vanilla extract

Optional add-ins: strawberries, blueberries, raspberries, chocolate chips
Instructions
Preheat the oven to 425ºF and line a half sheet pan with parchment paper.

In a large bowl, combine all of the ingredients except for the stir-ins. Mix everything together until you have a nice, thick pancake batter.

Carefully transfer the batter onto the prepared baking sheet and gently even out using a rubber spatula.

Add the topping of your choice! It's fun to change it up. Maybe do half a pan with one topping and the other half with another. Or even better, do quarters and choose four favorites!

Bake for 12-15 minutes or until set though, golden brown and fragrant.

Cut into 12 servings and enjoy with your favorite pancake toppings.

I made this this morning and YUMMY! I used a little maple syrup instead of monk fruit. They’re sweet enough when you pour maple syrup on them! So easy too and the nice thing is they are all hot at the same time instead of making them a few at a time!! Thanks for the recipe!! ❤️

As always love your recipes! Recently my ENT suggested I go gluten free. She said that gluten causes more congestion even if you have no allergy to it. So naturally I turn to you for recipes. It was a bit expensive to invest in both coconut and almond flour before knowing if I liked it so I found a blend of the two by King Arthur called paleo baking flour. I used 2 1/4 cups to equal the total amount of flour in the recipe. Then I used whole milk and maple syrup from your substitute suggestions. It turned out great and saved my budget! Thanks for all you do!

I make every pancake a sheet pan pancake! It is so much easier! Just put a teaspoon or two of oil and that's it!

@3:42 don’t know if you’re aware but you can actually poke a sturdy straw at the bottom tip of the strawberry towards the top leafy part to get your money’s worth instead of chopping a 1/4 of the strawberry 🤷🏻‍♂️ thanks for the delicious pancake recipe will try it soon!
