Who doesn’t love an easy dinner?! I served it with guacamole, pico de gallo, and sour cream. This is definitely a recipe worth sharing with everyone! 😋
Ingredients
•9 flour tortillas
•3 tbsp melted butter
•3 cups shredded chicken
•1 cup sour cream
•1 can black beans (rinsed and drained)
•1 can of corn (drained)
•3 cups shredded cheddar cheese
•1 packet taco seasoning
•1 can of Rotel diced tomatoes and green chilies (drained)
Directions
1)Preheat oven to 450ºF. Brush pan with melted butter. Place 6 flour tortillas around the edges of the sheet pan and then place 1 tortilla in the middle.
3)In a bowl, stir together shredded chicken, sour cream, black beans, corn, shredded cheese, taco seasoning, and Rotel diced tomatoes and green chilies.
4)Spread the chicken mixture over the tortillas. Place two tortillas in the center of the mixture. Fold the tortillas that are hanging over the edge of the and brush with butter.
5)Place a second sheet pan on top of the tortillas. Bake in the oven for 15 minutes and then remove the top baking sheet and bake for 5 more minutes. Let cool and enjoy!
