I’ve been making a dish similar to this for years and it is so good!! I like to start baking the veg - mainly big slices of tomato or cherry tomatoes, garlic, onions cut into rings, and anything else in the fridge - before I add the gnocchi. I usually let the veg bake for around 15 minutes and boil the gnocchi. After boiling and patting it dry, I add the gnocchi to the baking dish and give everything some extra olive oil and salt. I let that bake for another 15-20 mins, then I add lots and lots of cheese on top and put it back in the oven for another 5-10 minutes and it is so good!

This is a really good idea. Gnocchi, usually made with potatoes, flour and an egg to hold it together. All those would cook easily in the oven. Read the ingredient label. Make the best choice for you. Really like the idea ❤❤❤

Best food ever. Tastes too good to be so healthy and so simple. I make these big panfuls often for just me and as leftovers are even better. No recipe. Just whatever is available. You can't go wrong. I found leeks at the market today and can't wait to get them into a batch. 😊
