Hi Connie, I just made this today (it it setting in the fridge) as I wanted to make enchiladas this evening. The taste and texture seem awesome! Took me a while as the stores here I could not find KC. I made a double recipe! So thus far I have made your French Toast, Meatball Subs, Italian Meatloaf and now the Cheese! For this guy, cheese was the hardest thing to give up in going Vegan ... but this will help! I wonder - have you ever tried to make a sharp cheddar? That would be AWESOME!! Thank you Connie for all you do and a BIG hello from Seattle, WA!!

Finnally I got the kappa carragenan from England and I made this astonishing cheese. I little bit of salt, and a litle bit a liquid smoke made de right result. Thank you for another perfect recipe.

Yet another great recipe. If I tried this recipe, I'd use regular bell peppers, because I'm a wuss who can't take heat. I made another pepper jack cheese recipe that was SUPPOSED to stretch, and was SUPPOSED to be great for grilled cheese. Connie, I LOVE cottage cheese. I ate it all the time with tomatoes and cukes. Do you think you could possibly make something that resembles the taste and texture of cottage cheese? And, btw, I made your ranch dressing recipe. OMG, it gets better as it sits, although it didn't last very many days after I made it. I put that and sweet vidalia onion dressing in my salads, and what a great combo. I have to make more of both. I used to put cottage cheese in my salads at times, too, but I ate it mostly with tomatoes and cukes.

I just made this cheese...it is wonderful...it tastes awesome...not sure what I did wrong but it didn't come out white and it is not as firm as I would like it to be and that could be because of Agar Agar flakes that I used...but it is the only one that I can get my hands on...Thank you for all of your recipes....I will be trying them all...Loving it.

I used kappaI toasted some bread this morning with your vegan butter recipe then spread this cheese on top, toasted for a few second to warm the cheese. It was delicious, my husband like it too.
