The gerudo have evolved to have darker skin tones to protect themselves from the rays of the sun, which might not be the canon reason why they're darker, but it IS a good reason.

Wow. I didn't know about the built in shade. Here is what works for me. I go to the desert at night. I can wear the the snowquill set or even the warm doublet to stay comfortable. Then I go straight for the two Gerudo outposts. If I get through this quickly enough, I can aquire the Gerudo lady outfit. Link won't actually take damage until around noon. Doing the earlist adventuring at night and early morning helps beat the heat. Once the first desert set is purchased, Link can travel around the desert in the heat no problem.

You can also walk into the actual shade or drink a heat resistant potion like a normal person!! Yay!!!

Fun fact, you can also break Chuchu Jelly which will make you covered in water, allowing you to momentarily beat the heat.
