Coincidentally brewed Diamond Peak in the garden yesterday, and was in fact wondering why you recommend 75C for a tea that is really hard to overbrew. Now I know — and a lot more. 👍 Going to revisit those Master Class Videos soon.

Ahh yes I like what you say, and I do indeed begin to play with my teas, after following the origional brewing instructions.
Sometimes I brew a dud, sometimes I make it sing!!!
One other thing:
I walked into your shop in Camden in 2022, and I bought the last fire brewer that you had in stock.
It is a fascinating vessel, like an X-ray, I can see the magic happen, right before my eyes.
On the other end of the spectrum, my master Wu teapot keeps the magic a secret, only to be revealed when that precious pour takes place.
