There's a variant called Gutzwiller's Chess (James Gutzwiller, 1969) where Bishop always switches color. Developed by Cincinatti Chess League when Gutzwiller mated in a league match after inadvertently transferring a bishop move to an adjacent diagonal

In Shogi, the Bishop can be promoted to a piece called a Dragon Horse. After promotion, it can move one step orthogonally, allowing it to switch colours.

With isometric chess, notice how the red and blue diagonals map to green ranks and files

with multiple dimensions you can make it easy for yourself and add to the colors of the grid.
in 4dimensions a square can have 4 colors.
so if you want to make it into a 2d plane you have to combine colors on a square. The bishop will then always stay on one color while the other is changing.
and only a quadragonal moving piece would have to stay on the same double color.

The fact that a bishop can only cover half the board is a more important aspect than the way in which it moves. Bishops should move diagonally on their color.
