Finally! The part 2 you've all been asking for !!!!!

Again, the brainchild of a collab with Andy Baraghani, this is about as un-Italian as a lasagna can get. Really, it eats more like a potato gratin, that just so happens to have some lasagne noodles layered throughout. Oh, and don’t forget the slices of mortadella that are stacked throughout it and then piled on top and baked until crispy crunchy and fatty. An herb lovers (Andy) and morty-d lovers (me) dream dinner awaits.

Ingredients:

PRODUCE
2 medium shallots (4oz)
8 garlic cloves
2 rosemary sprigs
2 pounds yukon gold potatoes
2 lemons
1 large bunch basil
1 bunch parsley
½ large bunch dill

PANTRY
Extra virgin olive oil, for drizzling
½ pound dried lasagna sheets
Kosher salt, freshly ground black pepper

DAIRY
4 cups heavy cream
1 pound fontina cheese
4 oz grated parmigiano reggiano

PROTEIN
1 lb thinly sliced Mortadella

I like your energies together. Collaboration is hard. You two have totally different resting heartrates, I'm sure. And it was an honest chronicle of how your enthusiasm for a project can rise and fall as you go. In developing the recipe of two chefs in the kitchen that day, it's a multi-layered and lively success. Very fun.

The fresh pasta would have worked probably if you did not boil it and just baked it as it is. Either way, the mortadella was genius! I wanna try this but with pastrami!

3 things: 1- the color scheme of the lasagna? Love, like retro 60s 70s pink mint and cream just yes. 2- More Andy 3- It was fun to see you guys kinda f it up but still keep going, also just makes me want to get weird and design my own lasagna but following (some) guidelines. Really enjoyed the videos!

Yes, those potatoes needed more cooking.
They should have been parboiled.
A potato gratin would need an hour maybe??

But such a lovely spring dish!
