Nasu dengaku-Miso grazed egg plant-

Ingredients: for 1-2 people

1 large eggplant
2 tbs spiral olive oil
50cc water
4 tbs sake
4 tbs coconuts sugar
4 tbs spiral brown rice miso
4 tbs spiral mirin
1/2tbs sesame seeds

Instructions:

1. slice eggplant lengthwise down the middle
2. start slicing diagonal lines down the length of the eggplant. not to completely cut through and puncture the skin. Once you've sliced one way, create a criss-cross pattern by slicing diagonally in the other direction.
3. fry the eggplant in a frying pan with oil and turn over regulary. add water
4. preheat the oven to 180 degrees
5. add miso, mirin, sake and sugar in a small saucepan and bring to a gentle boil over medium- high heat until the sugar has dissolved
6.Put the eggplant on a tray and pour the sauce. Place in oven
7.Remove the eggplant from the over once it begins to darken
8.Sprinkle with sesame seeds
