How to make chocolate profiteroles and master choux pastry! I remember staying in an old Irish guesthouse when I was growing up where a dessert trolley was rolled around the dining room after dinner and you could pick a dessert of your choice. I could never resist creamy profiteroles smothered in a warm thick chocolate sauce.

Ingredients:

For the Choux Pastry:
60g salted butter
80g plain flour, sifted
3 large eggs
130ml water

For the Chantilly Cream:
200ml whipping cream
2 tbsp icing sugar
1 tbsp vanilla extract

For the Chocolate Sauce
60ml single cream
30g caster sugar
50g dark chocolate (70% cocoa solids), finely chopped

I’m from another part of the world and your recipe took my mind away to my childhood when my dear mam who I haven’t seen her in two years was buying me profiteroles from the shop on the way to our neighbourhood playground. This is my fav childhood treat as well. Gran used to make it all the time! Here in South Africa we call it "poffertjies" which is derived from the Dutch treat "Hollandse poffertje" which is not the same thing, but it's where the name comes from.

Definitely no worries in this about over mixing the dough like you get with most quick bread recipes! 😂 I'm gonna have to give this type of dough a try!

This looks absolutely delicious, and looks so impressive, other will think they are store bought! 🤤 I could open my own bakery with these, haha!

Oh, profiteroles. Delicious & classic. One of the first things I learned how to make when I started teaching myself how to cook. Except in my case, the first ones I ever made were Swan shaped ones. Leave it to me to always be fancy. lol

We had them a bit larger, split in half, filled with vanilla ice cream and drizzled wild hot fudge sauce. The best!
