Tofu in a potato salad?!? I love that idea!!! I imagine it being like egg potato salad which was my favourite!! Oh I am so trying this out but I may sprinkle a little black salt onto the tofu for a more egg vibe. Or use the vegan egg! Regardless this looks delicious :)
